This is a simple soup recipe ,but so full of flavor, that my mom made quite often growing up back at home. Chicken meat was simmered with cherry tomatoes until tender. And it's right before serving when I would add crushed fresh Thai chili pepper, fish sauce, fresh lime juice (note: fresh - never bottled one), and chopped cilantro. I love the tangy and spicy blend of this soup, it's light and refreshing which goes so nice with just the plain steamed rice.
